Dutch Baby

  • 4 tbsp butter
  • 1 c flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp pepper (for savory)
  • 4 eggs
  • 3/4 c milk
  • Preheat to 375

    Melt butter in 12” cast iron (in oven)

    Mix flour-salt (& opt. pepper)

    Add eggs & milk

    Pour batter into pan

    Top with cheese & other toppings

    Bake 375 for 25-30

    Variants

    Parmesan & Chive

    Top with

  • 1/4 c grated Parmesan
  • 1/4 c chives
  • Apple Bacon

  • Use Apple smoked Gouda & Gruyère
  • Cook bacon
  • (Sub. half the butter for bacon grease)
  • Dice apples
  • Cook in non-stick with a bit of bacon grease
  • Add ~4tbsp maple syrup Cook down
  • Add 1/4 bourbon & flambee
  • Goat Cheese & Pear

  • 1-2 pears
  • 1/4 lb goat cheese
  • 1/4 cup dark rum
  • Add half the goat cheese before bake

    Flambee diced pears with brown sugar & 1/4 cup dark rum

    Add goat cheese, then pears, then opt honey drizzle

    Goat Cheese & Peach

    Flambee white/donut peaches in brown sugar & Bourbon

    Top with peaches & goat cheese
